Dr Zola: Schmidt believes he walks in the footsteps of the gods. Only the world itself will satisfy him.

Colonel Phillips: You do realize that’s nuts, don’t you? What?

Dr Zola: The sanity of the plan is of no consequence.

趣味百科：牛排

食用牛肉的习惯最早来源于欧洲中世纪时，猪肉及羊肉是平民百姓的食用肉，牛肉则是王公贵族们的高级肉品，尊贵的牛肉被他们搭配上了当时也是享有尊贵身份的胡椒及香辛料一起烹调，并在特殊场合中供应，以彰显主人的尊贵身份。

牛肉富含丰富蛋白质，氨基酸组成比猪肉更接近人体需要，能提高机体抗病能力，对生长发育及术后、病后调养的人在补充失血、修复组织等方面特别适宜。 寒冬食牛肉可暖胃，是冬季的补益佳品。今天，美国是消费牛肉的最大国家，牛排则早在十九世纪中叶就成为美国人最爱的食用方式。但在亚洲，人们对牛肉有着两 级化的反应，比如日本，可以说是将牛肉发挥到了极致，但在我国则是刚刚处于起步阶段。

各国对牛肉的态度、风俗不同，所以牛肉的食用方法也不同：

美国食用牛排的方式粗犷且豪迈，不拘小节，整块腓力牛排烧烤后再切片。

罗马风味的牛排则最让人津津乐道，料理后，用油煎至表面成金黄，并注入白葡萄酒，据说这样的料理可以防止夏天的过敏症。

英国人则习惯于将大块的牛排叉起来烤。

法式牛排特别注重酱汁的调配，用各式的酱汁凸显牛排的尊贵地位。

至于德国人，吃牛排的方式非常奇特，“酸牛肉”光听名字就够让人匪夷所思，而生鲜牛肉则更是需要拿出勇气尝试的。

在日本，一般烧烤店中常用的日式照烧烤酱被运用在西式牛排中，使牛排口味别具一格。

西方人爱吃较生口味的牛排，由于这种牛排含油适中又略带肉汁，口感甚是鲜美。东方人更偏爱七成熟，因为怕看到肉中带血，因此认为血水越少越好。

影响牛排口味的因素很多，如食用速度，当牛排上桌后，享用牛排的速度可以决定牛排是否好吃。因为牛排中既有牛油又含汁液，温度如果稍低其牛排的鲜香度会随之降低。

吃牛排讲究火候，而并非享受酥烂口感，这也是在西餐中炖牛肉和煎牛排的区别。另外，餐具也会影响牛排的口味。吃牛排的刀一定要锋利，在吃牛排前一定要先查看一下刀齿是否分明清晰。除此以外，配汁对牛排口味的影响也很大。

英国的Jamie Oliver在他的youtube中就提到过，煎牛排的时候如何掌握熟度。很简单，就需要你的一只手：用手指按牛排，感觉牛排的软硬程度。同一只手的大拇 指和食指在捏在一起，虎口到大拇指根的软硬程度就是rare steak（一分熟）的感觉；拇指和中指就是medium rare（三分熟）；拇指无名指就是medium（五分熟），最后小拇指和拇指当然就是well done（全熟）了。
